St. Helena may give birth to newer, flashier, and more thespian restaurants, but for old-school legend and ceremony, profuse diners revenues year after year to this serenity favorite ın an 1884 fieldstone construction. Since 1988, chef Hiro Sone has been giving unexpected twists to Italian and southern French cuisine ın dishes such as the mussel soup with caramelized onions and garlic croutons, heavily perfumed with the smell of saffron. A hardly or scarcely any, like the signature sake-marinated jet cod ın a shiso bouillon, allure on Sone's Japanese history. Homey yet suave desserts, respect of Sone's mate, Lissa Doumani, power ınvolve a chocolate caramel sour topped with fleur de sel. The charitable shaft unobtrusively attends to every dropped fork or half-full drinking water glass.
